Fabulous Chicken Marsala

ingredients
For the pan-fried chicken:
1-1/2 lb. chicken breasts
salt & pepper
1/2 c. flour
vegetable oil
Season chicken breasts with salt and pepper, coat with flour, and pan-fry in a couple tablespoons of vegetable oil over medium heat. (If chicken breasts are thick, slice in half or pound out before frying.) Allow cooked chicken to drain on paper towels. Reserve drippings for sauce.
For the marsala sauce:
3-4 strips of bacon, chopped
8 oz. white button mushrooms, sliced
1 clove garlic, minced
1 T. tomato paste
1-1/4 c. Marsala wine
1/2 c. chicken stock
4 t. lemon juice***
4 T. butter

To drippings leftover from chicken breasts, add your chopped bacon. Fry until crispy and remove--drain on paper towels. Toss in sliced mushrooms. Saute until soft and golden over medium heat. Drain off any excess oil, especially if there is a lot (I prefer blotting with paper towels). Add in garlic, continue sauteing until golden. Add tomato paste to sauteed mushrooms, and stir to dissolve paste and coat all of the mushrooms. Allow the tomato paste to brown a little bit (~1-2 minutes), then deglaze the pan with marsala wine. Over medium-high heat, allow the sauce to come to a simmer and begin reducing. Add in chicken broth. Continue simmering and reducing. After a couple of minutes, once sauce has reduced and is no longer a thin liquid, cut heat to low and stir in lemon juice and butter. Add crisped bacon. Season with salt and pepper, to taste. Return chicken breasts to pan. Turn to coat with sauce. Best served with egg noodles.
***The original recipe called for lemon juice. Although I did add it, it seemed pointless. I think the tomato paste provided enough acidity, and the lemon flavor was also masked by the wine, for the most part. If you don't have lemon juice on hand, then I would consider skipping it altogether.

Creamy Orange Chicken Pasta

2-3 T butter
1/4 t. salt

dash-1/8 t. ground red pepper
2 heaping T orange marmalade
1 T dijon mustard
2 c. heavy whipping cream
3/4-1 lb. prepared pasta, depending on how "saucy" you like your pasta

Sauté chicken breasts in butter. Season with salt, pepper, and red pepper. After chicken has started to brown, stir in marmalade and dijon mustard, coating chicken cubes. Add in heavy cream and allow sauce to simmer until thickened. If sauce gets too thick, thin out by adding a splash of water or milk. Serve over pasta. (OPTIONAL: Top with sliced or slivered, toasted almonds)

BBQ Beer Pork Chops
ingredients
5-8 pork chops (boneless)
salt & pepper
2-3 T. olive oil (or butter)
Season pork chops and brown in oil over medium heat. Remove from pan & set aside.
4-5 T. flour
1 bottle beer (anything but LIGHT beer)
1/2 c. brown sugar (light or dark)
1/3 c. ketchup
salt & pepper, to taste (maybe a pinch of crushed red pepper?)

Whisk flour into drippings leftover in pan. Allow roux to cook for a minute, whisking constantly, to get rid of flour-y taste. Deglaze pan by whisking in about half of the beer. Slowly whisk in remaining beer, ketchup, and brown sugar. Stir until smooth and well combined. Allow to simmer and thicken. Add pork chops and their juices to sauce. Turn to coat. Cover and continue simmering for about 10-15 minutes.

Rich, Asian-Inspired Grilled Salmon

ingredients
2-3 lbs. salmon
salt & pepper
Marinade:
2 T Dijon mustard
3 T soy sauce
6 T olive oil
1 t. minced garlic

Salt and pepper your salmon fillet. Mix up marinade with a whisk. Pour half of the marinade over your salmon; reserve the other half for topping cooked salmon. Allow salmon to sit in marinade while grill is preheating.
Grill salmon over medium-high heat. Grease the grill grates with oil to prevent sticking as much as possible. First cook skin-side down for 5 minutes. Flip and cook another 5 minutes. Do NOT overcook the salmon. If it is still a little undercooked in the center, don't worry--it will continue to cook after being taken off the grill. Remove salmon from heat. Pour reserved marinade over it, and allow it to rest for 10 minutes.

STRAWBERRY RHUBARB CRISP
ingredients
2 cups sliced strawberries
2 cups sliced rhubarb
½ tsp vanilla
½ cup sugar
¾ cup flour
¼ cup brown sugar
2 tbsp sugar
½ tsp salt
½ cup butter, cold, cut into small cubes
1 cup old-fashioned rolled oats

Preheat oven to 375
In a large bowl, combine the fruit, vanilla and sugar. Let sit while you prepare the topping.
Using a food processor, combine the flour, sugars and salt. Pulse in the butter and then add the oats.
Place the fruit in a baking dish and top with half the oat topping.
Bake for 1 hour. Serve warm with ice cream.

CHOCOLATE COVERED CHERRY CHEESECAKE
ingredients
For the base
¼ cup pecans
1½ cup chocolate crumbs
2 tbsp sugar
⅓ cup melted butter
For the cheesecake layer
3 8 oz packages cream cheese, room temperature
¾ cup sugar
1 tsp lemon juice
1½ tsp vanilla
3 whole eggs
1 cup canned, fresh pitted or frozen cherries - drained and patted dry.
½ cup semi sweet chocolate chips
1 tsp butter
splash of cream

Preheat the oven to 325
In a food processor run the pecans through until they become finely chopped. Add the sugar, chocolate crumbs and melted butter. Pulse until it resembles a sandy texture.
Press the mixture in the bottom and up the sides of a Springform pan. Bake for 8 minutes.
In the bowl of a stand mixer, cream the cheese and sugar together until light and fluffy.
Add the lemon juice, vanilla and eggs. Mix until well combined. Pour the mixture over the crust.
Melt the chocolate chips, butter and cream in a small bowl.
Press the cherries into the cheesecake and drizzle with the melted chocolate. Swirl lightly with a knife.
Bake for 60 minutes. Cool completely in the fridge before serving. Overnight is best.

CAMPBELL’S EASY SKILLET CHICKEN PARMESAN

2 tbsp (30 mL) olive oil
4 (454 g) skinless, boneless chicken breasts
¼ tsp (1 mL) each salt and freshly ground pepper
1 can (284 mL) Campbell's® Condensed Tomato with Basil and Oregano Soup
½ cup (125 mL) Campbell's® Ready to Use Chicken Broth
1 cup (250 mL) shredded mozzarella cheese (about 6 ounces)
¼ cup (60 mL) grated Parmesan cheese
2 tbsp (30 mL) finely chopped fresh parsley

Preheat broiler to high. Heat olive oil in an ovenproof, large non-stick skillet set over medium-high heat. Season chicken all over with salt and pepper. Cook chicken for 3 to 5 minutes per side or until browned; transfer to a plate.
Stir soup and broth into skillet; bring to a simmer. Return chicken back to skillet and cover with sauce. Cook, covered, for 7 to 8 minutes or until chicken is cooked through.
Toss mozzarella with Parmesan; sprinkle over chicken. Broil for 2 to 3 minutes or until cheese is melted and golden. Sprinkle with parsley before serving.

½ cup cocoa powder

1 cup semi sweet chocolate chips
mini chocolate chips for topping - optional

Preheat the oven to 350 degrees and coat an 8 inch square pan with cooking spray.
Combine the mashed bananas and sugar into a large mixing bowl and stir until the sugar is dissolved.
Add the applesauce, vanilla and egg. Stir to combine.
Stir in the flour, cocoa powder, baking soda and salt. Add the chocolate chips and pour into the prepared baking pan.
Sprinkle mini chocolate chips over the top and bake for 25-30 minutes. Mine took 28.

Nutella Cheesecake

¾ cup chopped toasted hazelnuts
1 lb (450 g) cream cheese (at room temperature)

Break the graham crackers (digestives) into the bowl of a processor, add the butter and 15 ml or 1 tablespoon of Nutella, and blitz until it starts to clump. Add 25g/3 tablespoons of the hazelnuts and continue to pulse until you have a damp, sandy mixture.
Tip into a 23 cm/9-inch round springform and press into the base either using your hands or the back of a spoon. Place in the fridge to chill.
Beat the cream cheese and confectioners’ sugar until smooth and then add the remaining Nutella to the cream cheese mixture, and continue beating until combined.
Take the springform out of the fridge and carefully smooth the Nutella mixture over the base. Scatter the remaining chopped hazelnuts on top to cover and place the tin in the fridge for at least four hours or overnight. Serve straight from the fridge for best results.

Chocolate Peanut Butter Poke Cake

1 box yellow cake mix, plus ingredients to make cake
2/3 cup peanut butter
1 1/2 cup chocolate syrup (Hershey's)
1 can sweetened condensed milk
8 regular Reese's peanut butter cups, divided
8 oz cool whip, thawed
1 (16oz) can chocolate frosting

Prepare cake according to package directions, adding in 2/3 cup peanut butter before mixing. Bake cake in a 9x13-inch pan.
While cake is baking, mix milk and chocolate syrup until well blended.
When the cake is done and while it's still hot, poke holes in it with a fork or straw. Pour milk mixture over the cake. Allow cake to cool completely.
Chop Reese's cups into small pieces. Sprinkle half of the Reese's cups over cake.
Carefully combine chocolate frosting and Cool Whip. Spread over the top of cake, then sprinkle the remaining Reese's cup on top. Chill.
Tip: I like to refrigerate the Reese's cups so they chop easier.

KING RANCH BEEF CASSEROLE

2 lbs. lean ground beef
1 medium onion, diced
1 cup bell pepper, diced
dash of salt
1 10 3/4 oz. can cream of mushroom
1 10 3/4 oz. can cream of chicken
1 10 oz. can mild rotel tomatoes, drained
1/4 tsp garlic powder
1/2 tsp chili powder
2 1/2 cups cheddar cheese, grated
10 corn tortillas

Preheat oven to 350 degrees.
Heat a skillet over medium heat and add the beef and onions. When meat has almost cooked all the way add the bell pepper and sprinkle with a dash of salt. When the meat is brown and thoroughly cooked drain the grease from the pan.
Heat a medium size sauce pan over low/medium heat. Add the cream of mushroom, cream of chicken, rotel tomatoes, garlic powder and chili powder. Stir and cook until the mixture is warm and then turn off the heat.
Tear each tortilla into pieces and dip each piece into the sauce mixture. (Does not have to be well coated in the mixture or you will use it all up and won't have enough for the dish) Place the tortillas down in a large casserole dish. Then top with half of the meat mixture and then half of the sauce. Sprinkle 2 cups of the cheese over the sauce and then repeat the layers finishing with the rest of the cheese.
Cook for 40 minutes

Mint Chocolate Eclair Cake

ingredients
1 box chocolate graham crackers
2 (3 1/4-ounce) boxes vanilla instant pudding
3 1/2 cups milk
1 1/2 tsp mint extract, divided
green food coloring
1 (8-ounce) container Cool Whip, thawed
1 can chocolate frosting

Spray the bottom of a 9x13 pan with cooking spray.
Line the bottom of the pan with whole graham crackers.
In bowl of an electric mixer, mix pudding with milk, a few drops of green food coloring and 3/4 teaspoon mint extract; beat at medium speed for 2 minutes. Fold in whipped topping. Pour half the pudding mixture over graham crackers. Place another layer of whole graham crackers on top of pudding layer. Pour over remaining half of pudding mixture and cover with another layer of graham crackers.
Heat the container of prepared frosting, uncovered in the microwave for 1 minute. Stir in remaining 3/4 teaspoon of mint extract. Pour over the top of the cake. Refrigerate for at least 12 hours before serving.

1 bag Heath Toffee bits

Bake cake in a 9x13-inch pan according to direction on the package.
While cake is baking, mix condensed milk and caramel topping until well blended. When the cake is done and while it's still hot, poke holes in it with a fork or straw. Pour milk mixture over the cake. Allow cake to cool completely. Sprinkle half of the Heath bits over cake. Spread Cool Whip over the top, then sprinkle the remaining Heath bits on top. Chill.

Italian Cream Cake

ingredients
1 cup buttermilk
1 tsp baking soda
2 cups sugar
1/2 cup butter
1/2 cup margarine (I like earth balance)
1/2 cup veg oil (I used sunflower oil but you can use most any kind)
4 egg yolks
4 egg whites
1 tsp vanilla extract
2 cups of AP or GF flour
1 cup of flaked coconut
1 cup of walnuts or pecans

Toast your coconut and walnuts or pecans for about 10-15 minutes at 350 degrees. You will need more for the icing, so toast about 2 cups of each (mixed together) and set aside to cool.
Preheat oven to 325 degrees and grease and parchment your pans. I used a half sheet pan to make a two layer 1/4 sheet cake, or you can use 3X – 8″ or 9″ round pans to make a layer cake.
First measure out your buttermilk and add the baking soda to it and set it aside. In a stand mixer beat the butter and margarine together, then add the oil. Scrape down sides. Add the sugar and beat until well creamed. Add the yolks, then vanilla, then very gently mix in the flour until just mix and then add the buttermilk. Do not over mix. Remove batter from the mixing bowl and gently fold in your toasted coconut and pecans or walnuts.
Lastly whip your egg whites to stiff peaks and fold those into the batter. Spread the batter into your pans and bake for 30 -40 minutes until the top is golden brown and the cake springs back slightly when you press on it with your finger.

S’mores Muddy Buddies® Brownies
ingredients
1 box premium brownie mix
Water, vegetable oil and egg called for on brownie mix box
2 cups miniature marshmallows
1 1/2 cups Chex Mix® Muddy Buddies® Brownie Supreme snack mix (from 10.5-oz bag)
1 bar (1.55 oz) milk chocolate candy, broken into 1-inch squares

Heat oven to 350°F (325°F for dark or nonstick pan). Make brownies as directed on box for 9-inch square pan. After removing pan from oven, set oven control to broil.
Immediately sprinkle marshmallows and snack mix over warm brownies. Broil with top 4 to 5 inches from heat 30 to 60 seconds or until marshmallows are golden brown. (Watch carefully; marshmallows and snack mix will brown quickly.)
Sprinkle with candy. Cool about 30 minutes. Cut into 4 rows by 4 rows. Store loosely covered.

Taco Corn Bread Casserole

ingredients
1 pkg 8.5 oz corn bread/muffin mix
1 egg
1/3 c milk
1 lb hamburger
1 pkg taco seasoning mix
1 can(s) black beans
1 c sour cream
1 c mexican cheese (or any cheese you like)
1/2 c onion, chopped
1 medium tomato, chopped
1 c shredded lettuce
1 can(s) sliced olives (optional)

1 Brown the hamburger and then add the taco seasoning, according to package directions.
2 Preheat the oven to 350. In a large bowl, combine the corn bread, egg and milk until blended. Spread into an 8 x 8 pan sprayed with cooking spray. Bake for 15 minutes.
3 Combine taco meat and beans, spread over corn bread. Combine sour cream, 3/4 cup cheese and onion. Spread over meat mixture. Bake for 20 - 25 minutes longer or until heated through and cheese is melted. Sprinkle with tomato, lettuce and remaining 1/4 cup of cheese.

¾ Cup Butter
2 Cups Brown Sugar
2½ tsp baking powder
3 eggs
Bag of chocolate Chips
1 tsp vanilla
2¾ Cups Flou

Preheat the oven to 350 degrees.
Melt the butter and mix it with the brown sugar in a large mixing bowl.
Add the flour and baking powder. The mix will be crumbly at this point. Be careful not to overmix these!
Add eggs and vanilla. Lastly the chocolate chips.
Spread in a 9×13 pan.
Bake for 25-30 minutes. Enjoy!

Butternut Squash and Spinach Lasagna

ingredients
Butternut Squash Filling:
2 cups butternut squash puree (about half of squash)
1 cup ricotta cheese
1/2 cup milk (or more, if needed)
1/4 + 1/8 teaspoon salt
1/4 teaspoon nutmeg
Spinach Filling:
1 cup cooked spinach (8 oz uncooked)
1 cup ricotta cheese
1 cup mozzarella cheese
2 garlic cloves, minced
1/4 teaspoon salt
pepper, to taste
Other Ingredients:
10 oz lasagna noodles, cooked (for gluten free, use Tinkyada brown rice lasagna noodles)
1 and 1/2 cups mozzarella cheese (or more)
1/2 cup Parmesan cheese (on top)
Italian seasoning
Paprika
Basil

Preheat oven to 375 F.
Butternut Squash Filling:
For this filling, you will need to have pre-cooked butternut squash puree. Using food processor, combine 2 cups of butternut squash puree with Ricotta cheese, milk, salt and nutmeg. Add more milk if needed (to make the butternut squash filling very creamy). Mix very well, taste and add more salt, if needed.
Spinach Filling:
Combine spinach, Ricotta cheese, mozzarella, garlic, salt and pepper. Mix, taste, and add more salt and pepper, if needed.
Cooking lasagna noodles:
Bring a very large pot of water to boil, and cook lasagna noodles according to package instructions. Rinse in cold water, drain. Using knife, trim noodles to fit your baking dish (if necessary).
Lasagna assembly:
Prepare a baking dish - I used a casserole dish 11 inches x 8.5 inches x 3 inches deep. Grease the lasagna dish lightly with olive oil spray. Spread 1/3 of butternut squash filling on the bottom of the dish. Sprinkle lightly with mozzarella cheese. Top with cooked lasagna noodles without overlapping (I used 3 noodles).
Spread half of spinach filling over the noodles. Top lightly with Mozzarella cheese. Top with cooked noodles.
Spread another layer (1/3) of butternut squash mixture, then sprinkle lightly with Mozzarella cheese. Top with cooked noodles.
Spread the remaining half of spinach filling over the noodles. Top lightly with Mozzarella cheese. Top with the final layer of cooked noodles.
Spread a generous amount of butternut squash filling (the remaining 1/3) over this final layer of noodles, sprinkle with grated Parmesan and remaining mozzarella cheese (about 1/2 cup of mozzarella). Generously sprinkle the cheese with Italian seasoning, paprika, basil.
Cover the baking dish with foil and bake for 30 min. Remove foil and bake additional 10 minutes.
